A delicious and pretty looking little salad. Definitely one of my favourites. The flavours are perfectly balanced in this one, it's sharp enough and mild enough at the same time. Rich salmon taste combined with creaminess of feta cheese and complimented by it's saltiness (although mild curd cheese, like tvorog, will work well too), served on juicy green vegetables, with onion and freshly ground pepper to spice it up and finished off with a few drops of freshly squeezed lemon juice. Perfect.
- hot smoked salmon fillet or bellies
- feta cheese or curd cheese (tvorog)
- corn salad
- fresh cucumber
- red onion
- fresh parsley leaves
- black or green pepper
- lemon juice
Place a handful or two of corn salad on a plate.
Thinly slice a piece of fresh cucumber and add. Sprinkle a pinch of salt on top if you like.
Cut feta cheese or tvorog in small cubes and add.
Peel the skin off the salmon bellies or fillet and cut or tear in small pieces, add. Squeeze a few drops of lemon juice on top.
Cut a few slices of red onion, divide in separate rings (or half rings) and scatter on top.
Sprinkle with chopped parsley and some black or green pepper.
Serve slightly chilled but don't refrigerate for too long.
